Here is how it works to buy beef from us. You purchase our steer based on its total weight. We then deliver it to the processor. You will pay the butcher fees based on the hanging weight of the steer. The hanging weight of an animal is
typically around 60% of its live weight. This is due to losing blood, head, hide, hooves, viscera, lungs, and heart. For instance, if a steer weighs 1,000 lbs live, its hanging weight will be 600 lbs.
Buying a Quarter :
When purchasing a quarter of a steer, the butcher follows a standard cut sheet, and you won't be able to adjust the cuts. You can only make adjustments if you purchase a whole or half steer. On average, customers can expect to fill their freezer with about 60 to 65% of the hanging weight, which is around 95-100 pounds of beef. The breakdown of cuts will be approximately 25% for steak cuts, 35% for roasts, stew meat, short ribs, and 40% for burger meat. When you pick up your quarter, you will pay the processing fee directly to the butcher. Currently the fee is .94lb X hanging weight plus disposal and butchering fees.
Purchasing a Half:
When purchasing a half steer, you can choose your cuts. The processor can help you decide on the best cuts for your family. Half of the beef will have a hanging weight of around 300 lbs, and after
processing, you'll end up with about 200 lbs of meat in your freezer, which is around 60% to 65% of the hanging weight. When you pick up your half, you will pay the processing fee directly to the butcher. Currently the fee is .94lb X hanging weight plus disposal and butchering fees.
Purchasing a Whole Steer:
When you purchase a whole steer, you can choose your cuts. The processor can guide you through the cut sheet to get what's best for your family. The hanging weight of the whole beef will be around 600 lbs, which is the weight of the meat you pay the butcher to process. Typically, you will put around 60 to 65% of the hanging weight, approximately 400 lbs of beef, into your freezer. When you pick up your whole, you will pay the processing fee directly to the butcher. Currently the fee is .94lb X hanging weight plus disposal and butchering fees.
For example, a recent steer weighed 1000 pounds on the hoof, but the hanging weight provided by the processor was 492 lbs. We brought home 320 pounds of beef for our freezer and paid a processing fee of $492.48 at pick-up. This is a lot of beef and feeds our family for a year.
Your beef will be ready for pickup approximately 14 days after the steer arrives at the processor. It will be wrapped according to your preferences and is freezer ready. You will need one cubic foot of
freezer space for every 35 lbs. of meat.
We establish our beef pricing off of current market pricing and costs.
Our beef is currently priced at 4.25 on the hoof.

At Southern Oak Farms Beef, we believe in a holistic and sustainable approach to ranching. We use regenerative grazing practices that promote soil health and biodiversity. Our cattle are pasture raised, resulting in a healthier and more delicious product. Our steers take 20 to 24 months to reach butcher weight with a healthy grass and natural diet. This process is more expensive as an annual cost compared to typical feedlot steers, which are sent to a feedlot at 800 lbs at 14 months and are fed in a concrete pen for 90 days before being slaughtered at 1200 lbs. Feedlots also slaughter old cows, heifers, bulls, etc., so you don’t know what kind of meat you will get from a grocery store. These steers are raised right here in Walnut Hill Florida.

We sell our pork in half and whole Pig options based on the weight of the pig at processing (live weight). On average, you can expect to take home 70-75% of the hanging weight in packaged meat. For a whole hog, which typically has a live weight of around 250 lbs, the hanging weight is approximately 180 lbs and yielding 130-140 lbs of take-home pork in a variety of cuts, including chops, roasts, bacon, and sausage. You are able to choose your cut.
A half pig with a live weight of about 125 lbs results in a hanging weight of approximately 90 lbs, costing and yielding 65-70 lbs of take-home pork. Buying in bulk not only provides better value but also allows you to customize your cuts for your family’s needs while ensuring you’re getting high-quality, farm-fresh pork directly from our farm.
