You purchase our steer based on its total weight. We then deliver it to the processor. You will
pay the butcher fees based on the hanging weight of the steer. The hanging weight of an animal is
typically around 60% of its live weight. This is due to losing blood, head, hide, hooves, viscera, lungs,
and heart. For instance, if a cow weighs 1,000 lbs live, its hanging weight will be 600 lbs.
Buying a Quarter :
When purchasing a quarter of beef, the butcher follows a standard cut sheet, and you
won't be able to adjust the cuts. You can only make adjustments if you purchase a whole or half
steer. On average, customers can expect to fill their freezer with about 60 to 65% of the hanging
weight, which is around 95-100 pounds of beef. The breakdown of cuts will be approximately 25% for
steak cuts, 35% for roasts, stew meat, short ribs, and 40% for burger meat. When you pick up your
quarter, the processing fee is currently .89lb X hanging weight plus disposal and butchering fees,
totaling around $135 to $150.
Purchasing a Half:
When purchasing a half steer, you can choose your cuts. The processor can help you decide on
the best cuts for your family. Half of the beef will have a hanging weight of around 300 lbs, and after
processing, you'll end up with about 200 lbs of meat in your freezer, which is around 60% to 65% of the
hanging weight. When you pick up your half, the processing fee is currently .89lb X hanging weight plus
disposal and butchering fees, which will average around $221.25.
Purchasing a Whole Steer:
When you purchase a whole steer, you can choose your cuts. The processor can guide you
through the cut sheet to get what's best for your family. The hanging weight of the whole beef will be
around 600 lbs, which is the weight of the meat you pay the butcher to process. Typically, you will put
around 60 to 65% of the hanging weight, approximately 400 lbs of beef, into your freezer. As a
customer, the processing fee for a whole steer is currently calculated at .89lb X hanging weight plus
disposal and butchering fees.
For example, a recent steer weighed 1000 pounds on the hoof, but the hanging weight provided by the
processor was 492 lbs. We brought home 320 pounds of beef for our freezer and paid a processing fee
of $492.48 at pick-up.
The beef is ready for pickup approximately 14 days after the steer arrives at the processor. It will
be wrapped according to your preferences and prepared for freezing. You will need one cubic foot of
freezer space for every 35 lbs. of meat.
What's Different about our Beef?
Our steers take 20 to 24 months to reach butcher weight with a healthy grass and natural diet.
This process is more expensive as an annual cost compared to typical feedlot steers, which are sent to
a feedlot at 800 lbs at 14 months and are fed in a concrete pen for 90 days before being slaughtered at
1200 lbs. Feedlots also slaughter old cows, heifers, bulls, etc., so you don’t know what kind of meat you
will get from a grocery store.
Our beef is an investment in your and your family's health. You will notice the difference in taste,
texture, and less waste. Because our beef has a lower fat content, there is little to no shrinkage during
